The freezer is my friend. When I do cook something, I usually make a double or triple recipe. For example, if I make spaghetti sauce, I make a whole big crock pot full of it. After my family eats that night, I freeze the rest in dinner size portions. I find that even if I forget to take something out of the freezer, I can usually just reheat it frozen in a pinch. Things that freeze really well are pasta sauce (pasta also), taco meat (or any other ground meat meal), stirfry, etc.
The crock pot has been mentioned a lot for a reason! It definitely helps, especially when you are away all day. I prep the day/night before, then put it on in the morning before I leave, nothing like walking in from a busy day and smelling dinner all ready for you.
